Candied Orange Chocolate Cupcakes

I had bought a bunch of oranges about a week ago and totally forgot about them in the fridge. In an attempt to save them from spoiling, I squeezed some and made the rest into candied orange slices, because you never know when you might need some. and what do you know I actually did.

My sister wanted some cupcakes for some kind of pre-christmas vacation thing at her school, she explained what it was but I kinda forgot (no I’m not a bad sister I was just busy with senior project stuff).

So I made these little chocolate orange cupcakes, topped with orange glaze and a slice of candied orange. They turned out fluffy, light and moist, everything you want your cupcake to be.

And of course I had to eat a couple, you know for quality control.Image

Candied Orange Chocolate Cupcakes
Ingredients

– 3/4 cups unsweetened cocoa powder
– 1/4 cup hot water
– 1 1/4 cups unbleached all-purpose flour
– 1/2 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 2 large eggs, at room temperature
– 1 1/2 cups packed light brown sugar
– 1/2 cup orange juice
– 1 teaspoon vanilla extract
– 1/4 cup canola oil
– zest from one orange
– Lindt Intense Orange Swiss Thins (optional), broken into pieces

For the glaze
– 1/4 cup powdered sugar
– 4 tablespoons orange juice
– candied orange slices.

Directions

1- Preheat the oven to 175°C. Line cupcake tin with paper liners.
2- Heat water and orange juice until boiling.
3- In a small bowl, stir the cocoa powder and pieces of Lindt into the hot water mixture until it dissolves; set aside.
4- Sift the flour, baking powder, baking soda, and salt together into a bowl. Grate the zest from the orange into the bowl. Set aside.
4- In a large bowl, whisk together the eggs and brown sugar until well combined. Whisk in the oil and vanilla.
5- Whisk in flour mixture, stir until well combined then add cocoa mixture.
6- Divide the batter among the cupcake cups filling each about half full. Bake until the cupcakes are puffed and a skewer inserted into the center of one comes out clean 15-20 minutes. Let cool completely on a wire rack. Remove the cupcakes from the pan.
7- For the glaze: Mix together the powdered sugar and orange juice until fully dissolved, brush tops of cupcakes with the glaze, and add an orange slice on top of each.
